The taste and aroma of this porridge will definitely kick off your Christmas feelings. Okay it's in the middle of summer when this post is written, but gingerbread porridge is at least as good now as when the snow falls. It is my dear girlfriend who made this quick recipe, and by the name of judging it may sound like the porridge contains sugar, but not!
The gingerbread spice contains nothing but cinnamon, ginger, carnations and cardamom. If you do not want gingerbread flavor on the porridge, skip the spice and use more cinnamon instead.
- 5 eggs
- 1 cup coconut milk
- 0.5 dl of coconut flour
- 3 teaspoons gingerbread spice
- 1 teaspoon cinnamon
- A few pinches of salt
- Crack the eggs in a saucepan, and add all the other ingredients.
- Turn on medium heat, and use a whisk to stir everything into a batter. Continue stirring until the porridge has become warm and coagulated to the desired consistency. The longer it is allowed to stand on the heat, the thicker it becomes.
Quick, easy and very good! Serve with some coconut milk, berries, nuts and seeds.
